CORN FREE TURKEY…TO SOUP!!! To relax!!

I immediately thought of you guys. Always looking for hearty meals, that make mass quantities and can be frozen into single serving sizes. After looking over Laura’s recipe I changed it a little more, adding the options of starches instead of wheat flour, also changing cow milk cream to possibly coconut cream. It will all work, it’s all interchangeable. Once you learn these modifications you will be able to take virtually any recipe (aside from corn bread, corn on the cob, and other majorly corned items) and make them corn free. Continue reading

PEPPERMINT PATTY’S RECREATIONS…CORN FREE!!!

Peppermint Patty recreations are a success to me (no one else tried them) Finding our old favorites corn free is nearly impossible so the best way to deal with our frustration is attempt to create it at home. Weathers changing here in the North East, winter is coming. I immediately turn to my soups. Of course being corn allergic we cannot find canned soups too often and honestly, they taste terrible. Corn Free PUMPKIN PIE ICE CREAM, gluten free, egg free, nut free, possibly dairy free;depending on the recipe you choose!!

This was an exciting creation. I was making ice cream, had a big huge can of puree’d pumkin and never used it. I decided to put some into my vanilla ice cream base and mix it up. It was ok, but needed some other pumpkin pie flavors. So I dashed cinnamon, it was better. Then I added a dash of Nutmeg and KA-POW the most creamy and amazing pumpkin pie ice cream!!

This marshmallow mix can be left out to firm up over night. This creates the “stale” firm, dry consistency of marshmallows you get out of the bags at the store. Roll them in unsweetened cocoa powder so they are not sticky, or corn free powdered sugar.

GLUTEN FREE FLOUR!!!

This is a 1 to 1 replacement for wheat flour. It keeps in the fridge for 3 months and 6 months in the Freezer.

This recipe only makes 2 cups of flour. Enza makes large batches, places it in a large Tupperware container, or any other sealable container. Shakes all the ingredients together and scoops it as if he was using wheat flour. She bakes cakes, cookies, pancakes, brownies etc. Anything that calls for wheat can be replaced with this. The nutritionist told her to let it get to room temperature before putting into the recipe.

homemade vanilla extract

I buy my vanilla beans from Amazon.com they have a large selection and the beans are great. I just bought 1/2 pound of Bourbon Vanilla Beans (named after the region not the alcohol beverage) for 25.00 A much more affordable price then 2 beans for 10.00 in the stores. The beans come fresh and soft and smell wonderful.
